Almond Crisps

杏仁薄脆xìng rén bó cuì


1 cup or 80 g sliced almonds

2 egg whites

1/4 cup or 50 g sugar

1/4 cup or 50 g olive oil

1/4 cup or 35 g flour

1 tbsp milk powder

1 pinch salt

Prep Almond Batter

  1. Preheat oven to 280°F.

  2. Prep a baking sheet with aluminum foil.

  3. In a bowl, wash and strain almonds.

  4. Spread almonds on the baking sheet.

  5. Bake for 6 minutes.

  6. While baking, beat egg whites in a bowl until a layer of bubbles appears on top.

  7. Add sugar, olive oil, milk powder, salt, and flour. Stir until creamy.

  8. Add baked almond slices and mix well.

Make Crisps

  1. Preheat oven to 300°F.

  2. Prep a baking sheet with aluminum foil.

  3. Add a spoonful of almond batter onto the baking sheet and make it into a circle using a spoon. Spread gently, as thin as you can.

  4. Fit as many onto the sheet as you can, spaced about an inch apart from each other.

  5. Bake for 15 minutes. Depending on how thick your crisps are, you may need to keep baking. If the centers are golden and the edges are browned, they're done! Otherwise, keep baking in 5-minute increments until browned.

  6. Let cool and then serve!
