Enoki Mushrooms & Bacon

蒜香金针菇suàn xiāng jīn zhēn gū

Ingredients

7 oz Enoki mushrooms

5-6 strips of bacon

1 bunch mung bean vermicelli

6 garlic cloves

1-2 hot pepper

2 green onions

2 tbsp light soy sauce

1/4 tsp salt

1 tbsp olive oil

1 pinch sugar

Prep Ingredients

  1. Soak vermicelli in a bowl with 1 cup hot water and 1 cup cold water. Let sit for 30 minutes.

  2. Cut open the package of enoki mushrooms while also cutting the roots off.

  3. Place enoki mushrooms in a bowl of water.

  4. Tear apart the enoki mushrooms and clean them in the water.

  5. Slice the bacon into small pieces.

  6. Mince garlic.

  7. Wash and chop up the green onions.

  8. Wash and remove the core of any hot pepper you want to use (use 2 if you like a spicier dish). Then cut into thin strips.

  9. In a small bowl, mix the light soy sauce, 1/4 tsp salt, and a pinch of sugar. Mix well so that the salt and sugar dissolve.

Fry Bacon 🥓

  1. Heat a pan over medium heat.

  2. Add bacon and fry for 6-8 minutes, until you see white foam.

  3. Turn off heat.

Prep & Steam Dish

  1. Fill a steamer 1/3 full of water, and heat over high heat.

  2. In a plate that will fit in your steamer, spread the vermicelli out.

  3. Add a layer of half the enoki mushrooms, then half the bacon.

  4. Add a second layer of the rest of the enoki mushrooms, then the rest of the bacon.

  5. Once the water in your steamer is boiling, place the plate carefully in the steamer and cover for ~12 minutes.

  6. After 12 minutes, turn off the heat and remove the lid.

  7. Let cool for a few minutes.

  8. In the meantime, wipe the pan you used for the bacon clean, and heat over medium heat.

  9. Add 1 tbsp olive oil, garlic, and hot pepper to the pan.

  10. Saute for 3 minutes or until you can smell the fragrant garlic and pepper.

  11. Turn off the heat.

  12. Now, carefully, remove the plate from the steamer (you can use a spatula under the plate to give yourself some leverage).

  13. Pour the soy sauce mixture and sprinkle green onions on top.

  14. Pour the garlic/pepper mixture on top.

  15. If you want, you can mix everything up in the plate or serve as is!
