Fried Rice

鸡蛋绿葱炒饭jī dàn lù cōng chǎo fàn

Ingredients

1 cup raw rice

3 large eggs

1 tsp minced ginger

2 green onions

2 tbsp olive oil

(optional) 1 Cantonese sausage

Prep Rice

  1. At least one hour, and ideally a few days, before cooking, steam the rice in a rice cooker.

  2. Let cool and store in the refrigerator.

Prep Ingredients

  1. Break up the rice with a fork or chopsticks so it's no longer clumped together.

  2. Crack the eggs into a bowl and mix well.

  3. Chop green onion into small pieces.

  4. Slice sausage. We like Cantonese sausage, but you can really use any sausage you want.

Fry the Rice

  1. Heat a pan on high heat.

  2. Add olive oil to pan and heat for 1 minute.

  3. Add egg to the pan and do not stir.

  4. Let the egg cook until the edges firm up and are bubbling.

  5. Add the rice on top of the egg.

  6. Turn the heat down to medium.

  7. Use a spatula to flip the egg and rice and mix well, breaking the egg up into smaller pieces.

  8. Add ginger, salt, green onion, sausage, salt, and a sprinkle of black pepper.

  9. Continue to stir and mix well for 2 more minutes.

  10. Turn off heat and serve!
