Garlic Braised Salmon

香煎三文鱼xiāng jiān sān wén yú

Ingredients

1 lb salmon steak

5 garlic cloves

6 slices ginger

2 tbsp olive oil

1 tbsp Chinese cooking wine

1 tbsp light soy sauce

1 tsp dark soy sauce

1/4 tsp black pepper

1/4 tsp salt

Prep Salmon

  1. If the skin is still on, scale the skin using a knife.

  2. Clean the salmon by rinsing it under cold water for 1 minute.

  3. Pat dry with a paper towel.

  4. Cut the salmon into 4-6 smaller pieces.

Prep Ingredients

  1. Slice garlic into thin slices.

  2. Slice ginger into thin slices.

Braise Salmon

  1. Add olive oil to pan (note the heat should not be on yet).

  2. Arrange each slice of ginger with 3-4 slices of garlic around it in the pan.

  3. Sprinkle salt and pepper on top.

  4. Arrange salmon on top of the ginger and garlic.

  5. Pour cooking wine, light soy sauce, and dark soy sauce on top of the salmon.

  6. Turn the stove on to medium high, cover the pan with a lid, and cook for 5 minutes or until there is a thin layer of sauce left.

  7. Use a spatula to flip the salmon over carefully, then cook for another 5 minutes.

  8. Turn the stove to low, flip the salmon over carefully again, cover the pan, and let simmer for 2-3 minutes more minutes.

  9. Turn off the stove and serve!
