Scallion Pancakes

葱油饼cōng yóu bǐng

Ingredients

2 cups all purpose flour

3/4 cup lukewarm water

6 tbsp olive oil

1 egg

3 green onions

1/8 tsp salt

Make the Dough & Prep Ingredients

  1. Add flour and 2 tbsp olive oil to a mixing bowl and mix well.

  2. Beat the egg in a small bowl and then add to the mixing bowl.

  3. Add 1/3 cup of water and stir in the same direction until mixed well.

  4. Add 1 tbsp of water at a time and knead until a soft dough forms. The dough should stick together but not be too sticky to your hands.

  5. Cover in plastic wrap and let sit for 15 minutes.

  6. Trim and chop up the green onion into small pieces.

Form Pancakes

  1. Sprinkle some flour on a cutting board or clean surface. Transfer the dough to your board / surface.

  2. Press the dough into a flat slab.

  3. Use a rolling pin to roll out the dough so it fully covers your cutting board and/or is about 1/8 inch thick.

  4. Spread 1 tbsp of olive oil onto the dough and cover evenly. If the dough doesn't seem overly oiled (i.e. oil spilling off the dough), add another 1 tbsp of olive oil.

  5. Sprinkle 1/8 tsp of salt on the dough evenly.

  6. Spread the chopped green onion evenly on the dough.

  7. Spread 1 tbsp flour on top of the dough.

  8. Starting on the long side closest to you, roll the dough tightly.

  9. Cut the dough into 6 pieces.

  10. Pinch the ends of each dough piece so that the filling is sealed inside.

  11. Twist each dough piece and then flatten into a round.

  12. Cover the flattened dough pieces with plastic wrap and let sit for 10 minutes.

  13. Flatten the dough pieces with your hands.

  14. Roll out each dough piece into a thin circle. We like our scallion pancakes as thin as possible, but you can also go for thicker pancakes.

Fry the Pancakes

  1. Heat a pan over medium-low.

  2. After 1 minute, add 1/2 tbsp olive oil. Make sure the oil covers the entire pan.

  3. Add a pancake to the pan and cover the pan. Let fry for 2 minutes.

  4. Add 1/2 tbsp olive oil to the top of the pancake, and then flip it. Let fry for another 2 minutes.

  5. Add 1 tsp olive oil to the pancake, and then flip it again. Let fry for another 1 minute or until the bottom is golden brown.

  6. Add 1 tsp olive oil to the pancake, and then flip one last time. Let fry for another 1 minute or until both sides are golden brown.

  7. Remove from pan and repeat steps 2-7 with all the pancakes.

  8. Cut the pancakes into triangles and serve!
