Soy Sauce Braised Steak

酱汁黑椒牛排jiàng zhī hēi jiāo niú pái

Ingredients

1 lb tenderloin steak or strip steak

1 tbsp olive oil

2 tbsp Chinese cooking wine

2 tbsp light soy sauce

2 tbsp dark soy sauce

1 pinch salt

1/4 tsp ground black pepper

Prep Steak

  1. Use a knife to poke several holes in the steak.

  2. Wash under cold water and then soak in cold water for 10 minutes.

  3. Strain and then dry the steak completely with paper towels.

Braise Steak

  1. Heat a pan over medium-high heat.

  2. Add olive oil, 1/8 tsp salt, and 1/8 tsp ground pepper evenly to the pan.

  3. Lay the steak on top of the salt and pepper.

  4. Drizzle 1 tbsp Chinese cooking wine, 1 tbsp light soy sauce, and 1 tbsp dark soy sauce on top of the steak.

  5. Add a sprinkle of black pepper on top of the steak.

  6. Cover the pan and let braise for 4-5 minutes (3 for a rare steak).

  7. Flip the steak over. If you see soy sauce burning in the pan, turn the temperature to medium and add some more olive oil.

  8. Drizzle 1 tbsp Chinese cooking wine, 1 tbsp light soy sauce, and 1 tbsp dark soy sauce on top of the steak.

  9. Cover, and let braise for another 4-5 minutes.

  10. Turn off the stove, and serve!
