Stir-Fried Chinese Vermicelli

蚂蚁上树má yǐ shàng shù

Ingredients

1 lb ground pork

1.5 cups diced white onion

2 bunches mung bean vermicelli

2 tbsp Olive oil

1 tbsp Chinese cooking wine

2 slices ginger

2 tbsp light soy sauce

1 tsp dark soy sauce

2 garlic cloves

1 green onion

1 tsp Sichuan bean paste

1/4 tsp Salt

Prep Early

  1. Mix 2 cups of cold water with a cup of boiling water first, and soak the vermicelli in the lukewarm water for 1 hour.

Prep Ingredients

  1. Cut the vermicelli in half crosswise and continue to soak while you prep the other ingredients.

  2. Mince ginger and garlic.

  3. Cut up the green onion.

  4. Dice the white onion.

Stir-fry the Dish

  1. Heat a pan over medium-high.

  2. Add olive oil, ginger, and the Sichuan bean paste to the pan. Fry the ingredients for 1 minute.

  3. Add ground pork (or beef if you prefer), Chinese cooking wine, and some black pepper.

  4. Stir and break apart the ground park until it's fully cooked with light color.

  5. Add onion, light soy sauce, and dark soy sauce.

  6. Continue to stir until the onions soften.

  7. Drain the vermicelli and add to the pan.

  8. Add 1/2 cup hot water to the pan.

  9. Turn the stove to low heat and let simmer for 2 minutes.

  10. Add green onion and garlic and continue to stir.

  11. Once the sauce has slightly thickened, turn off the heat and serve!
