Stir-Fried String Beans and Beef

干煸四季豆gān biān sì jì dòu

Ingredients

1 lb green beans

1/2 lb ground beef

1 tbsp minced garlic

1 tbsp minced ginger

2 green onions

1 hot pepper

1 tbsp Chinese cooking wine

3 tbsp light soy sauce

2 tsp dark soy sauce

1/2 tsp salt

3 tbsp olive oil

1/2 cup water

Prep Ingredients

  1. Soak ground beef in cold water for 10 minutes.

  2. Chop up green onions.

  3. Mince garlic.

  4. Mince ginger.

  5. Remove the seeds and core from any hot pepper you want to use, then cut into thin slices.

  6. Wash green beans and remove ends.

Marinate Ground Beef

  1. Drain ground beef and squeeze out as much water as possible.

  2. Add cooking wine, 1/4 tsp salt, and a few grinds of black pepper.

  3. Use a spoon or chopsticks to stir in circles for 2 minutes until ground beef is well mixed and loose. Make sure to stir in the same direction the whole time.

  4. Add 1 tbsp olive oil and stir again in circles for 1 minute.

Cook the Dish

  1. Heat a pan on low heat, and add 2 tbsp olive oil. Heat olive oil for 1 minute.

  2. Increase heat to medium-high heat.

  3. Add ginger, hot pepper, and ground beef.

  4. Stir for 2 minutes or until ground beef has cooked through.

  5. Add 1 tbsp light soy sauce, 1 tsp dark soy sauce, 1/4 tsp salt, and a couple grinds of black pepper.

  6. Stir for 4-5 minutes until the beef has absorbed most of the liquid in the pan.

  7. Lower heat to medium.

  8. Add green beans, 1/4 tsp salt, 1 tbsp light soy sauce, and 1 tsp dark soy sauce.

  9. Stir 2-3 minutes until green beans are a bright, shiny green.

  10. Add 1/3 cup water.

  11. Stir a few times, then cover for 8-10 minutes (stirring every 2-3 minutes) until green beans are completely softened.

  12. Remove the lid and add the garlic and green onion.

  13. Stir and add in another 1/4 tsp salt to taste.

  14. Once most of the liquid has been absorbed, turn off the heat and serve!
